Chick Pea Salad

You know those wonderful salads you see featured in the deli cases, this is one of them you can make at home.  Chickpeas are just the beginning and then you add layers of color and texture before mixing together into a dish that will last for days in the fridge. This is another reason everyone needs parsley growing in their garden.


Chickpea Salad


Add into one bowl:


1/2 cup chickpeas

2 lemon cucumbers

14 cherry tomatoes

2/3 cup feta cheese

1/2 chopped orange colored pepper

3 sprigs of parsley chopped

2 big leaves of basil 

Garlic salt to taste

1/2 teaspoon cumin

Add a light pour of olive oil to dress before mixing together.
