Fig Jam -- A variation on a theme...

The recipe is just the starting point for Kathy Ryan

Artists rarely create the same thing over and over -- a little more of this, a little less of that and suddenly the work has a life of its own.Kathy Ryan  did that using this recipe by Veena Azmanov  for her inspiration. (Figs are naturally low in sugar and also act as pectin which makes this recipe even more appealing.)

Kathy had Desert King figs growing in her backyard, but she also had apples and Italian plums on hand. Why not merge them with the figs? The recipe also called for cinnamon, but maybe a touch of fennel and cardamom would take it up a notch?  Ahh… perfection.  The result was nothing like Veena's recipe, but it did jam together the spirit of the day along with the available fruit. Ask for a sample the next time you're at her house.

Veena generously gives many tips on her webpage (far too many to recap here), give it a read and then give fig jam a try the next time they are in season and you feel like creating your own variation on a theme.
