Mizuna Salad

Cheryl Lowe shakes it up with a

peppery & sweet mixture.

Lettuce by itself is boring, but when mixed with the feistiness of Mizuna (pictured above) and mellowed out with apple bits and sunflower seeds,

then given a sweet/sour dressing...  boredom is vanquished.


Salad Base

Mizuna leaves (washed, dried, chopped)

Lettuce (washed, dried, chopped)

Apple  - 1/2 to 1 apple (cut in matchsticks)

Sunflower seeds 1/2 cup

Cooked Quinoa 1-2 cups

 

Dressing / mix together / shake well and let set to marry the flavors.

1/4 cup olive oil

1/4 tsp garlic power (or 2 small fresh cloves)

1 tsp lemon juice

2 Tbsp balsamic vinegar

1 Tbsp maple syrup

 

Toss dressing with salad and serve as a main dish or a hearty sideshow.
