Sweet(er) Ice Kale and more

Frosty weather has its paybacks

Have you heard ofice wine? It's a specialty made from picking grapes after they have frozen on the vine and before they thaw. They offer a sweeter version of themselves and tends to be on the pricey side.


May we offer the FBG's counter part -- Ice Kale! 


Kale (or any brassica) becomes sweeter during cold weather -- the plants convert the starch in their leaves to sugar (think anti-freeze) as a way to keep the their cells from being damaged. As the sugar is released it becomes less likely to freeze and also sweeter. The same goes for root veggies this time of year.


Once cooked, the sweetness really reveals itself.  Below is a Brussels Sprouts leaf which is often discarded for the sprouts, but it you steam it for a minute it becomes an excellent wrap for leftover veggies. Add some sauce, bake, and voila -- delicious dinner greens.
