Tzatziki sauce

It's easier to make than pronounce...

Spell it or say it however you want... but keep this super simple recipe in your head for the next Greek night. Without Tzatziki, it's just not Greek enough. Our thanks to Sophie DeGroot for this crowd pleaser. 


Ingredients

1 cucumber

2 cups of Greek Yogurt

Dill/Olive oil/salt/lemon to taste


You may want to cut it in half, it makes a LOT.


Recipe

Start by making friends with someone growing cucumbers. At some point they''ll want to shove the end of the year abundance over to you.


Next peel (or not) and grate up one cucumber. Take the seeds out first if you're a purist, but it won't matter.


Fill a nylon cheese bag or even a bandana will do, and wrap/squeeze out the juice until the pulp is somewhat dry. If you don't do this the mix will separate into watery layers later.


Mix together the cucumber, Greek Yogurt, dill, salt, lemon... olive oil maybe as it may not need it for a better texture.


That's it. Pour yourself a glass of Ouzo, invite some friends, and get out the gyros.
