If you can't beat it - EAT IT!

Spring weeds are delicious. Have them for lunch.

Turn those spring garden clean up tasks into grocery shopping... technically Mother Nature did the "growing" in these recipes, but gardeners do the gathering, so it counts.


Featured left is chickweed,which aggressively comes up in our spring gardens. Usually we rip it out and toss it in the compost bin, but maybe it deserves a second life in a dish? Chickweed contains vitamins A, D, B complex, C, rutin (a bioflavinoid), calcium, potassium, phosphorus, zinc, manganese, sodium, copper, iron and silica. Try this forged Chickweed pesto from Colleen Codekas. She specializes in forged and fermented food. 


Above is Miner's lettuce. Ashley Adamant is responsible for the circular salad. How fun is that? It's little round slices of love in a bowl.Miner's Lettuce (thesize of a decent salad) contains a third of your daily requirement of Vitamin C,

22 percent of the Vitamin A, and 10 percent of the iron. 


Since they both pop up at the same time we often transpose one name for the other -- seeing them side-by-side is a nice botanical lesson and now, a lunch option. Happily both are FREE for the picking and eating.
